Chef Dustin Brandt is a French-trained chef who utilizes classic techniques to create a modern global menu. Based in Boulder Colorado, he has previously worked at Frasca Food and Wine and L'atelier, as well as opening Confit in Rosetta Hall. Due to the pandemic, Chef Brandt has transitioned his focus to private dining with Underground Fine Dining, forming strong relationships with local farmers to showcase the finest ingredients Colorado has to offer.

If only I could give a rating higher than five stars, as my experience with Underground Fine Dining was exceptional. From the moment I agreed to hire them, Dustin was attentive in helping me plan the menu, offering suggestions and accommodating changes without any issues. As an out-of-towner, I had been concerned about relying on reviews to guide my decision, but from the cheese and fruit tray to the impeccable dessert, everything was absolutely fantastic.
This private dinner was hosted for my daughter's wedding night, with 11 guests including photographers and videographers, yet Dustin and his assistant effortlessly rose to the occasion. They prepared and served our food to perfection while we were away at the wedding, and were waiting for us as soon as we returned. The service was outstanding, and both Dustin and his assistant were personable and easy to work with.
My highest recommendation goes to Underground Fine Dining. I would definitely use them again if I ever return to the area, even if it wasn't for a special event. Their food and company are simply that good. My only regret is the distance that separates us, as I would love to use their services much more frequently.

Dustin is truly incredible! He is a must-have for your next private event. He did an exceptional job catering for the 11 ravenous girls at our bachelorette party. Professional, friendly, and incredibly personable, I would undoubtedly book him again!
Moreover, the food was absolutely delectable. I requested an innovative and distinctive menu, and Dustin delivered astonishingly! My taste buds were overjoyed!

My wife and I celebrated her birthday with our family members. With Dustin's help, we created an exceptional 5-course meal. The food was superb, and Dustin's assistance made the whole process effortless. He even cleaned up after we finished eating, leaving us to enjoy the evening. It was a fantastic experience, and we would definitely do it again. It's a silver lining that Covid has introduced us to the idea of using a personal chef.
