We are a local, small business owned by immigrants, with Madhoo Seth, also known as Spice Girl, as our founder and Executive Chef. Hailing from New Delhi, India, she is the driving force behind our exceptional flavors, creativity, and customer experience in both our Restaurant and Catering operations. Our business is deeply committed to environmental sustainability, fair wages, income equality, community wellbeing, and inclusiveness.
Roots is the result of nearly two decades of culinary and hospitality experience. Originally established as "The Gourmet Kitchen" catering company in February 2003, we served a diverse range of fusion and multicultural cuisines to our clients in Denver Metro and Front Range. In December 2014, we expanded our business with the opening of Copper Leaf Gardens & Event Center. However, the COVID-19 pandemic significantly affected our event and catering operations. Therefore, we embraced our immigrant roots and opened Roots Restaurant in July 2020.
At Roots, we prioritize authentic flavors from around the world, humility, and a deep concern for our community and environment. We understand that everything is interconnected, and our actions have far-reaching consequences. For this reason, we have made environmental sustainability, fair wages, income equality, community wellbeing, and inclusiveness our core values. These values guide us in our efforts to provide exceptional flavors and hospitality to our guests. Every check includes an automatic 22% employee and environment sustainability (EES) fee, which is not a tip but covers costs for fair wages, paid time off, wellness allowances, health insurance, sustainability efforts, and making every meal carbon neutral.
