With over thirty years of experience as an executive chef, Chef Dietz has specialized in upscale seafood and steakhouse cuisine. He has honed his craft at renowned establishments such as Eddie V's Prime Seafood, Pappa's Brothers Steakhouse, the Oceanaire, and Cafe Pacific, spanning from San Francisco to Dallas. Chef Dietz holds a degree in Classic French and International Cuisine from Le Cordon Bleu in San Francisco, as well as a certification from the Oriental cooking school in Bangkok, Thailand.
Not only has Chef Dietz taught advanced food preparation and garde manger at Collin College Culinary, but he has also earned two James Beard Awards and has appeared in several TV appearances across networks such as ABC, NBC, CBS, FOX, and TXCN. Furthermore, Chef Dietz has been featured in an array of publications such as The Dallas Morning News, Texas Monthly, Nations Restaurant News, and Seafood Business.
Currently, Chef Dietz has transitioned to providing his services for small private events and weekly home-cooked meals. His licenses including ServSafe, Health Department, and Metro Eatz insurance are up-to-date.

Chef Brian was amazing. We indulged in a delightful meal consisting of succulent steak and scrumptious lobster. The steak was cooked to perfection and we savored a delicious flambe for dessert. Everything was absolutely flawless, and we enjoyed the seafood and vegetables too. Thank you, Chef Brian. We certainly look forward to using your services again.

Chef Brian is amazing! He responded to my request promptly and was incredibly cooperative when it came to selecting the menu. This exclusive dinner was specifically for my grandparents who were absolutely thrilled to experience a private dinner prepared by a skilled chef. Chef Brian's hospitality did not go unnoticed as everyone found him to be sincere and courteous. His culinary expertise truly shone through the extraordinary Asian themed dinner that was served. Every dish, from the ponzu butter scallops to the Chilean sea bass and finally the stunning bananas foster, was impeccably presented and tasted phenomenal. I would definitely repeat this experience and rate it 10 out of 10!

Following an extensive renovation, Chef Brian assisted us in inaugurating our new kitchen by preparing a special anniversary feast. He aided me in selecting the menu and modified the meal to comply with my pregnant wife's dietary restrictions and food aversions. The meal was remarkable, featuring delectable salmon and filet, accompanied by whipped potatoes and glazed carrots. The salad was an exceptional starter, and the banana foster was a fabulous dessert. I will definitely recommend this experience to my loved ones as an ideal staycation date night!

What an outstanding experience with Chef Brian! He went above and beyond to ensure my boyfriend's birthday dinner was memorable. The quality of the food was exceptional, with my boyfriend claiming the salmon was the best he has ever tasted. I highly recommend Chef Brian for your next dinner! He is truly amazing. We hired him to help celebrate our friend's 40th birthday, and he made the occasion incredibly special for us all. Chef Brian was responsive, easy to work with, and patient throughout the planning process. He listened carefully to our event's background and crafted a delicious and personalized menu.
